Foodie Friday: Chicken Fajita/Chicken Fajita Stir Fry/Yuca(Cassava) Recipe :)



     As salaamu alaykum  and hello lovelies! I finally have my charger for my laptop!  I am back to doing what I love and that is blogging! This post was supposed to be up last friday, but for some reason when I tried writing on my tablet  it would not let me scroll down any further to continue writing my post. This is a different post since I am a beauty blogger. I figured I can switch it up sometimes. Plus who doesn't love food?!  Since I am a mother and a wife, I thought I would also share some of my recipes and food findings.Hope you enjoy!

     I was scrolling down my youtube subscriptions, and I stumbled upon a video on how to make Chicken Fajitas. It was perfect timing because I was trying to figure out what to cook for dinner. It 
really is such a simple recipe, so I thought I would share the video with you guys as well as show you my finished results on the dish.


Taken From Still Glam Mom :

*Let marinade for 24 hours for full flavor-

Serves about 3, so double or triple for a large family!
Chicken Fajitas
2 lbs. boneless chicken breast (about 3 large breasts) cut into strips
1/2 teaspoon dry oregano
1/2 teaspoon chili powder
1 teaspoon kosher salt
1 teaspoon cumin
1/4 teaspoon black pepper
1/4 teaspoon crushed Red Pepper or flakes
Juice of 1 lemon
2 Tablespoon olive oil
1 large onion, sliced
1 green bell pepper, washed, seeds and ribs removed, sliced
1 orange/red bell pepper, washed, seeds and ribs removed, sliced


Here is my finished dish.

You can serve this in a fajita wrap.You can add in the wrap sour cream,shredded cheese,tomatoes,slices of avocado.cilantro, and refried beans.You can basically stuff it with whatever you like lol.




Since I didn't have fajitas to wrap the chicken in, I decided to serve it with yellow rice and Yuca(Cassava).

How to Cook Yuca(Cassava) There are many ways to cook Yuca(Cassava). I wanted to share the Puerto Rican version. :)

Ingredients: 
1.Yuca(Cassava)
2.One whole large onion cut in slices.
3.Five cloves of fresh garlic. Chopped.
4.Salt.
5.Olive oil.
6.Red Wine Vinegar.

For the Cassava..
1. Boil until it is soft.
2.Set it aside.
3.In the Same pot, add olive oil depending if you want a lot of sauce or not. 
4. Saute the fresh garlic(Four or Five cloves) for about a 30 secs. Be careful not to burn the garlic.
5.Add the Red wine vinegar. Add more or less depending on your sour preference :).
6.Add the onions and saute until the onions become transparent. Add salt.
7. Throw in the Yuca(Cassava) give it one stir so it can be covered in the juices. Cover and let it simmer for about two minutes and your done. At this point I also sprinkle with a little bit of Garlic powder before I stir for added flavor. I loooove garlic! :)

 Viola!
